What options do I have if I’d like to get creative and re-design my garden into something that resembles something you would find in ancient Rome with a few modern touches? Would it be difficult to find a professional who would be willing to take on such a job? What sort of professional or/and company should I inquire with about this?

It may be worth hiring a garden designer, they will advise you what will work and what won't give you detailed costs, they will source the supplier for materials and provide you with professional plans for a landscaper to build from and can even find the tradesmen to do the job. (The cost will be around 10-15% of your total budget.) Most of us have studied the various types of gardens over the centuries and ancient Rome is a really exciting time period.
Failing the design route a landscaping company will be able to provide what you need.
